Almond soup is a traditional Christmas recipe that is very quick and easy to prepare. The main ingredients are almonds and cream.
- – 2 litres of broth
- – 200 gr of ground toasted almonds
- – 3 egg yolks
- – 5 tablespoons of wheat semolina
- – Cream
- – White pepper
Preparation: 1. In a saucepan with the boiling broth, add the semolina, ground almonds and stir, cook for 10 minutes. 2. In a bowl, mix the egg yolks with the cream and whisk until a homogeneous texture is obtained. 3. Then, stirring constantly, gradually pour the cream and egg yolk mixture into the soup and boil for a few more minutes.
